Vegan Hasselback Potatoes

Ingredients:

  • 4 medium-sized potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 2 cloves garlic, minced
  • 2 tablespoons vegan butter, melted
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: Wash the potatoes thoroughly and dry them with a kitchen towel. Place a potato on a cutting board and, using a sharp knife, make thin slices along the length of the potato, about 1/8-inch apart, being careful not to slice all the way through. Repeat with the remaining potatoes.
  3. Season the potatoes: In a small bowl, mix together the olive oil, minced garlic, salt, and pepper. Brush the potatoes all over with the olive oil mixture, making sure to get in between the slices.
  4. Bake the potatoes: Place the potatoes on a baking sheet lined with parchment paper or aluminum foil. Bake in the preheated oven for about 40-50 minutes, or until the potatoes are tender on the inside and crispy on the outside. You can also cover them with foil for the first 20-25 minutes to prevent excessive browning.
  5. Finish with vegan butter: Once the potatoes are done, remove them from the oven and brush them with the melted vegan butter, allowing it to seep into the slices.
  6. Serve: Garnish the potatoes with chopped parsley if desired and serve hot.
