Vegan Hasselback Potatoes
Ingredients:
- 4 medium-sized potatoes
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 2 cloves garlic, minced
- 2 tablespoons vegan butter, melted
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Prepare the potatoes: Wash the potatoes thoroughly and dry them with a kitchen towel. Place a potato on a cutting board and, using a sharp knife, make thin slices along the length of the potato, about 1/8-inch apart, being careful not to slice all the way through. Repeat with the remaining potatoes.
- Season the potatoes: In a small bowl, mix together the olive oil, minced garlic, salt, and pepper. Brush the potatoes all over with the olive oil mixture, making sure to get in between the slices.
- Bake the potatoes: Place the potatoes on a baking sheet lined with parchment paper or aluminum foil. Bake in the preheated oven for about 40-50 minutes, or until the potatoes are tender on the inside and crispy on the outside. You can also cover them with foil for the first 20-25 minutes to prevent excessive browning.
- Finish with vegan butter: Once the potatoes are done, remove them from the oven and brush them with the melted vegan butter, allowing it to seep into the slices.
- Serve: Garnish the potatoes with chopped parsley if desired and serve hot.
