Vegan Golden Tofu Cakes

Ingredients:
- 1 block of firm tofu, pressed and drained
- 1/4 cup breadcrumbs (you can use gluten-free breadcrumbs if needed)
- 2 tablespoons nutritional yeast
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions:
- Prepare the Tofu:
- Press the tofu to remove excess water. You can do this by wrapping the tofu block in paper towels or a clean kitchen towel and placing a heavy object on top for about 15-20 minutes. Once pressed, crumble the tofu into a mixing bowl.
- Mix the Ingredients:
- To the crumbled tofu, add breadcrumbs, nutritional yeast, cornstarch, garlic powder, onion powder, turmeric powder, smoked paprika, salt, and pepper. Mix everything together until well combined. The mixture should hold together when pressed.
- Form the Tofu Cakes:
- Divide the tofu mixture into equal portions and shape them into small patties or cakes, about 1/2 inch thick.
- Cook the Tofu Cakes:
- Heat olive oil in a non-stick skillet over medium heat. Once the oil is hot, carefully place the tofu cakes in the skillet. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Once cooked, transfer the tofu cakes to a plate lined with paper towels to absorb any excess oil. Serve warm as a delicious appetizer, side dish, or protein-packed snack. Enjoy!
