Ingredients:

  1. ½ cup (60g) chickpea flour (besan) – for structure and lightness
  2. ½ cup (120ml) plant-based milk (unsweetened almond, oat, or soy) – for moisture
  3. ¼ cup (60ml) sparkling water – helps create a fluffy rise
  4. 1 tbsp olive oil – for richness and crispiness
  5. ½ tsp baking powder – for extra lift

Instructions:

  1. Preheat oven to 220°C (425°F). Place a muffin tin in the oven with a little oil in each cup and let it heat up.
  2. Mix ingredients: In a bowl, whisk chickpea flour, baking powder, plant milk, sparkling water, and a pinch of salt until smooth. Let it rest for 5–10 minutes.
  3. Pour & bake: Carefully remove the hot muffin tin and quickly pour the batter into the cups (about halfway full).
  4. Bake for 20–25 minutes until golden and puffed up. Avoid opening the oven during baking.
  5. Serve immediately with your favorite fillings or gravy!
