Vegan gluten free 5 ingredient Yorkshire puddings

Ingredients:
- ½ cup (60g) chickpea flour (besan) – for structure and lightness
- ½ cup (120ml) plant-based milk (unsweetened almond, oat, or soy) – for moisture
- ¼ cup (60ml) sparkling water – helps create a fluffy rise
- 1 tbsp olive oil – for richness and crispiness
- ½ tsp baking powder – for extra lift
Instructions:
- Preheat oven to 220°C (425°F). Place a muffin tin in the oven with a little oil in each cup and let it heat up.
- Mix ingredients: In a bowl, whisk chickpea flour, baking powder, plant milk, sparkling water, and a pinch of salt until smooth. Let it rest for 5–10 minutes.
- Pour & bake: Carefully remove the hot muffin tin and quickly pour the batter into the cups (about halfway full).
- Bake for 20–25 minutes until golden and puffed up. Avoid opening the oven during baking.
- Serve immediately with your favorite fillings or gravy!
