Vegan Custard Apple Cake

Ingredients:

For the Cake:
  • 2 cups all-purpose flour
  • 1 cup custard apple pulp (from approximately 2 custard apples)
  • ONE cup almond milk (or any plant-based milk)
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the Frosting (Optional):
  • 1 cup powdered sugar
  • 2 tablespoons vegan butter, softened
  • 1-2 tablespoons almond milk
    1/2 teaspoon vanilla extract
  • Instructions:
  • 1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  • 2. Prepare the Custard Apples:
  • Cut the custard apples in half, remove the seeds, and scoop out the pulp. Mash the pulp with a fork or blend briefly to get a smooth consistency.
  • 3. Make the Cake Batter:
  • In a large mixing bowl, combine the custard apple pulp, almond milk, sugar, vegetable oil, apple cider vinegar, and vanilla extract. Mix well until the sugar is dissolved.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • 4. Bake the Cake:
  • Pour the batter into the prepared cake pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • 5. Prepare the Frosting (Optional):
  • In a bowl, beat together the powdered sugar, vegan butter, almond milk, and vanilla extract until smooth and creamy.
  • 6. Frost the Cake:
  • Once the cake has cooled, spread the frosting over the top. You can also drizzle it with a bit of extra custard apple pulp for decoration.
  • 7. Slice and Serve:
