Instructions
1. Prepare the vegetables.
Wash and slice all vegetables into thin strips or matchsticks for easy rolling. You want uniform, slender pieces so the roll-ups are even and easy to slice. If you’re making these in advance, pat the vegetables dry to prevent excess moisture.
2. Spread the cream cheese.
Lay each tortilla flat on a clean surface or cutting board. Spread about 1/4 cup of vegan cream cheese evenly over each tortilla, reaching close to the edges. For extra flavor, mix in chopped herbs, garlic powder, or a bit of lemon zest into the cream cheese before spreading.
3. Layer the vegetables.
