VEGAN BUTTER PECAN PRALINE POKE CAKE
For the Cake:
- 2 cups all-purpose flour (you can use a gluten-free flour blend if preferred)
- 1 cup granulated sugar or coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk (or any other plant-based milk)
- 1/2 cup unsweetened applesauce
- 1/4 cup melted coconut oil or vegetable oil
- 2 teaspoons vanilla extract
- 1/2 cup chopped pecans
For the Praline Sauce:
- 1/4 cup vegan butter or coconut oil
- 1/2 cup brown sugar
- 1/4 cup unsweetened almond milk (or any other plant-based milk)
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
For the Topping:
- Vegan whipped cream (you can use coconut whipped cream)
- Additional chopped pecans for garnish
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the almond milk, applesauce, melted coconut oil, and vanilla extract to the dry ingredients. Stir until well combined and smooth.
- Fold in the chopped pecans.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake the cake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the praline sauce. In a small saucepan, melt the vegan butter over medium heat. Stir in the brown sugar and almond milk. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 2-3 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract and chopped pecans.
- Once the cake is done baking, remove it from the oven and let it cool for a few minutes.
- Using the handle of a wooden spoon or a straw, poke several holes all over the surface of the cake.
- Pour the praline sauce over the warm cake, making sure it seeps into the holes.
- Allow the cake to cool completely and the praline sauce to set.
- Once the cake has cooled, spread a layer of vegan whipped cream over the top.
- Garnish the cake with additional chopped pecans.
