VEGAN BUTTER PECAN PRALINE POKE CAKE

For the Cake:

  • 2 cups all-purpose flour (you can use a gluten-free flour blend if preferred)
  • 1 cup granulated sugar or coconut sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk (or any other plant-based milk)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped pecans

For the Praline Sauce:

  • 1/4 cup vegan butter or coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened almond milk (or any other plant-based milk)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

For the Topping:

  • Vegan whipped cream (you can use coconut whipped cream)
  • Additional chopped pecans for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the almond milk, applesauce, melted coconut oil, and vanilla extract to the dry ingredients. Stir until well combined and smooth.
  4. Fold in the chopped pecans.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake the cake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the praline sauce. In a small saucepan, melt the vegan butter over medium heat. Stir in the brown sugar and almond milk. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 2-3 minutes.
  8. Remove the saucepan from the heat and stir in the vanilla extract and chopped pecans.
  9. Once the cake is done baking, remove it from the oven and let it cool for a few minutes.
  10. Using the handle of a wooden spoon or a straw, poke several holes all over the surface of the cake.
  11. Pour the praline sauce over the warm cake, making sure it seeps into the holes.
  12. Allow the cake to cool completely and the praline sauce to set.
  13. Once the cake has cooled, spread a layer of vegan whipped cream over the top.
  14. Garnish the cake with additional chopped pecans.
