Vegan Broccoli Pizza

Ingredients:

  • 1 pre-made pizza crust (check for vegan options or make your own)
  • 1 cup broccoli florets, chopped into small pieces
  • 1/2 cup marinara sauce (check for vegan-friendly brands)
  • 1/2 cup vegan cheese, shredded (use your favorite variety)
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sliced mushrooms, sliced bell peppers, vegan sausage crumbles, etc.

Instructions:

  1. Preheat the oven: Preheat your oven according to the instructions on the pizza crust package or to 425°F (220°C).
  2. Prepare the broccoli: In a small pot of boiling water, blanch the broccoli florets for about 2 minutes, then drain and set aside.
  3. Sauté the onions and garlic: In a skillet, heat the olive oil over medium heat. Add the sliced onions and minced garlic. Sauté until the onions are softened and translucent, about 3-4 minutes. Remove from heat and set aside.
  4. Assemble the pizza: Place the pre-made pizza crust on a baking sheet or pizza stone. Spread the marinara sauce evenly over the crust, leaving a small border around the edges. Sprinkle the shredded vegan cheese over the sauce. Then, distribute the blanched broccoli florets, sautéed onions, and garlic evenly over the cheese.
  5. Bake the pizza: Transfer the assembled pizza to the preheated oven. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Serve: Remove the pizza from the oven and let it cool for a minute or two before slicing. Serve hot and enjoy your delicious Vegan Broccoli Pizza!
