Vegan Apple Fritters

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup almond milk (or any other plant-based milk)
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped apples (about 2 medium apples)
  • Oil for frying (such as vegetable oil or coconut oil)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Prepare the Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. Make the Batter:
    • Add the almond milk and vanilla extract to the dry ingredients. Stir until just combined. The batter should be thick and lumpy.
  3. Add Chopped Apples:
    • Fold in the chopped apples until they are evenly distributed in the batter.
  4. Heat Oil:
    • In a deep skillet or frying pan, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).
  5. Fry the Fritters:
    • Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Flatten slightly with the back of the spoon. Fry for 2-3 minutes on each side, or until golden brown and cooked through.
  6. Drain and Cool:
    • Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Allow them to cool slightly.
  7. Serve:
    • Optionally, dust the fritters with powdered sugar before serving. Enjoy warm!
