Vegan almond milk tortellini
Vegan almond milk tortellini
Ingredients:
- 1 package vegan tortellini
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 can full-fat coconut milk
- 1/2 cup unsweetened almond milk
- 1 tsp cornstarch
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions:
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the coconut milk to the pan and bring it to a simmer.
- In a small bowl, whisk together the almond milk and cornstarch until smooth. Add the mixture to the pan and stir well to combine.
- Continue to simmer the sauce, stirring occasionally, until it thickens and coats the back of a spoon.
- Season the sauce with salt and pepper to taste.
- Add the cooked tortellini to the pan and toss to coat in the sauce.
- Serve the tortellini hot, garnished with fresh parsley if desired. Enjoy!
