Vegan almond milk tortellini

Vegan almond milk tortellini

Ingredients:

  • 1 package vegan tortellini
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 can full-fat coconut milk
  • 1/2 cup unsweetened almond milk
  • 1 tsp cornstarch
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions:

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the coconut milk to the pan and bring it to a simmer.
  4. In a small bowl, whisk together the almond milk and cornstarch until smooth. Add the mixture to the pan and stir well to combine.
  5. Continue to simmer the sauce, stirring occasionally, until it thickens and coats the back of a spoon.
  6. Season the sauce with salt and pepper to taste.
  7. Add the cooked tortellini to the pan and toss to coat in the sauce.
  8. Serve the tortellini hot, garnished with fresh parsley if desired. Enjoy!
