Ingredients

- Eggs: 4 large
- Unsweetened cocoa powder: 5 tablespoons (35g | 1.2oz)
- Baking powder: 1 teaspoon
- Olive oil: for greasing the mold

- Lemon: 2 wedges
- Freeze-dried mango: 1 tablespoon
- Black loose-leaf tea: 2 tablespoons
- Water: 1 liter (4 cups), boiling
Instructions
Cake Preparation:
- Preheat oven to 180°C (360°F)
- Prepare the apples:
- Remove cores
- Peel completely
- Cut into medium-sized pieces
- Make the batter:
- Place apple pieces in a blender
- Blend until smooth
- Add eggs
- Add cocoa powder
- Add baking powder
- Blend until completely combined
- Baking:
- Grease a silicone loaf pan with olive oil
- Pour batter into prepared pan
- Bake for 45 minutes or until a toothpick comes out clean
- Let cool in pan for 10 minutes
Mango Tea Preparation:
- In a teapot or large heat-safe container:
- Add lemon wedges
- Add freeze-dried mango
- Add loose-leaf black tea
- Pour boiling water over ingredients
- Steep for 4-5 minutes
- Strain and serve
