Spinach and Egg Skillet with Cheese

Ingredients:

  • 1 teaspoon olive oil
  • 2 cups fresh spinach leaves
  • 2 large eggs
  • Salt and pepper to taste
  • 1/4 cup shredded reduced-fat cheese (such as cheddar or mozzarella)

Instructions:
