Savory Keto Parmesan Meatloaf: Low-Carb

Ingredients:

  • 1 1/2 pounds ground beef (85% lean)
  • 1/2 pound ground pork
  • 1 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup sugar-free ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, and almond flour.
    • Add the heavy cream, eggs, finely chopped onion, minced garlic, chopped parsley, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using).
    • Mix all the ingredients thoroughly until well combined. You can use your hands for better mixing, but be careful not to overmix as this can make the meatloaf tough.
  3. Shape the Meatloaf:
    • Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf shape if using a baking sheet.
    • In a small bowl, mix the sugar-free ketchup and Worcestershire sauce. Spread this mixture evenly over the top of the meatloaf.
  4. Bake the Meatloaf:
    • Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (71°C). If using a meat thermometer, insert it into the center of the meatloaf to check for doneness.
  5. Rest and Serve:
    • Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and makes it easier to slice.
