Savory Keto Parmesan Meatloaf: Low-Carb

Ingredients:
- 1 1/2 pounds ground beef (85% lean)
- 1/2 pound ground pork
- 1 cup grated Parmesan cheese
- 1/2 cup almond flour
- 1/2 cup heavy cream
- 2 large eggs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup sugar-free ketchup
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, and almond flour.
- Add the heavy cream, eggs, finely chopped onion, minced garlic, chopped parsley, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using).
- Mix all the ingredients thoroughly until well combined. You can use your hands for better mixing, but be careful not to overmix as this can make the meatloaf tough.
- Shape the Meatloaf:
- Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf shape if using a baking sheet.
- In a small bowl, mix the sugar-free ketchup and Worcestershire sauce. Spread this mixture evenly over the top of the meatloaf.
- Bake the Meatloaf:
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (71°C). If using a meat thermometer, insert it into the center of the meatloaf to check for doneness.
- Rest and Serve:
- Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and makes it easier to slice.
