Sautéed Corn, Zucchini & Peppers Skillet
Ingredients
1/2 yellow onion
1/2 green bell pepper
6 garlic cloves minced
1 bag of frozen corn, cooked (I used microwave to steam it)
1 red bell pepper diced
1-2 zucchini, diced
1-2 tsp of creole seasoning (Season to taste)
Cook the corn according to package and set aside. In a cast iron pan heat up 2 tbsp of olive oil on medium heat. Add onions and green bell peppers. Sauté for about 3 mins or so until onions are translucent. Next add garlic and a little more oil if needed to avoid sticking. Sauté for 30 seconds to release the fragrance. Next, add corn into the skillet and sauté for another 2 mins, allow the corn to incorporate in the onion mix. Next, add the red bell peppers and zucchini. Add creole seasoning. Stir in & mix well. Turn heat down to low. Cover the veggies for 2 mins just to allow the zucchini to heat through, just enough to warm them they should still have a bite to them. Take off heat and serve! Enjoy!
