Ingredients
Roast Chicken Drumsticks and Thighs
Marinade for 2.6kg chicken
• 4 tablespoon greek yoghurt
• 8 tablespoon olive oil
• 2 tablespoon garlic ginger paste
• 1 and half tablespoon cumin powder
• 1 and half tablespoon onion powder
• 1 tablespoon black pepper
• 2 tablespoon paprika
• 1 and half tablespoon smoked paprika
• 1 tablespoon Kashmiri chilli powder or normal chilli powder, to taste
• Juice of half lemon
• 2 tablespoon salt or to taste
Directions
• 1) You need chicken drumsticks and thigh.
• 2) Cut three deep slits into all the pieces.
• 3) Make the marinade using the ingredients listed.
• 4) Ensure the chicken is dry before you add to marinade.
• 5) Mix in the marinade then cover bowl with cling film and refrigerate overnight.
• 6) Prepare a roasting tray with rack and foil on bottom
• 7) Preheat oven to 200c
• 8) Stick it in the oven for 35 mins. Flip over and baste after 20 mins.
• 9) After 35 mins, flip over, baste and now broil it on full heat for 5 mins
• 10) If you don’t have a broil setting on your oven then continue to roast in oven for another 10 mins
