Quickled spicy red onions

Ingredients:

•1 large whole sliced/diced onion

•1/2 to 1 whole diced jalapeño

•1 or 2 TBS of chopped cilantro

•1/2 TB of Salt

•1 TB of sugar

•1/2 TSP black pepper(I also add a few large whole black peppercorn pieces)

•1 cup of cold water

•1 cup of red wine vinegar

●Chill in fridge for an hour or more, good in fridge for 5-7 days.
