Potato and Onion Skillet:

Ingredients:
- 4 medium potatoes, peeled and diced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: herbs such as rosemary or thyme for added flavor
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onions and minced garlic to the skillet and sauté until onions are soft and translucent, about 5 minutes.
- Add the diced potatoes to the skillet and season with salt, pepper, and any desired herbs.
- Cook, stirring occasionally, until the potatoes are golden brown and cooked through, about 15-20 minutes.
- Taste and adjust seasoning if needed.
- Serve hot as a side dish or as a main course with a side salad or some crusty bread.
