Potato and Onion Skillet:


  • 4 medium potatoes, peeled and diced
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: herbs such as rosemary or thyme for added flavor


  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced onions and minced garlic to the skillet and sauté until onions are soft and translucent, about 5 minutes.
  3. Add the diced potatoes to the skillet and season with salt, pepper, and any desired herbs.
  4. Cook, stirring occasionally, until the potatoes are golden brown and cooked through, about 15-20 minutes.
  5. Taste and adjust seasoning if needed.
  6. Serve hot as a side dish or as a main course with a side salad or some crusty bread.
