Not Yo’ Mama’s Banana Pudding

Ingredients
For the Pudding
- 2 cups heavy whipping cream
- 1 ½ cups unsweetened almond milk
- 4 large egg yolks
- ¾ cup granulated erythritol or keto-friendly sweetener (adjust to taste)
- 1 teaspoon banana extract (for flavor without carbs)
- 1 teaspoon vanilla extract
- ¼ teaspoon xanthan gum (for thickening)
For the Whipped Cream Layer
- 1 cup heavy whipping cream
- 2 tablespoons powdered erythritol
- ½ teaspoon vanilla extract
For the Cookie Layer
- Keto vanilla wafers or almond flour cookies (store-bought or homemade — see below)
Instructions
Step 1: Prepare the Keto Vanilla Wafers (Optional)
If you don’t have keto-friendly cookies, make these simple wafers:
- Ingredients:
- 1 cup almond flour
- ¼ cup melted butter
- 3 tablespoons erythritol
- ½ teaspoon vanilla extract
- Instructions:
- Preheat the oven to 350°F (175°C).
- Mix almond flour, melted butter, erythritol, and vanilla extract.
- Scoop small spoonfuls onto a baking sheet lined with parchment paper and flatten into thin rounds.
- Bake for 10-12 minutes until golden brown. Let them cool and set aside.
Step 2: Make the Pudding
- In a saucepan over medium heat, combine heavy cream, almond milk, and sweetener.
- In a separate bowl, whisk the egg yolks. Gradually temper the yolks by adding a small amount of the hot cream mixture while whisking continuously.
- Slowly pour the tempered yolks back into the saucepan while stirring.
- Cook for 4-5 minutes, stirring constantly, until thickened.
- Remove from heat and add banana and vanilla extracts. Sprinkle xanthan gum and whisk well.
- Let it cool to room temperature, then refrigerate for at least 1 hour to thicken further.
Step 3: Prepare the Whipped Cream
- In a chilled bowl, beat heavy cream, powdered erythritol, and vanilla extract until stiff peaks form.
Step 4: Assemble the Pudding
- In a large dish or individual serving cups, layer keto vanilla wafers at the bottom.
- Add a layer of banana-flavored pudding on top.
- Spread a layer of whipped cream over the pudding.
- Repeat the layers until all ingredients are used, finishing with a whipped cream layer.
- Garnish with crushed keto wafers or a sprinkle of unsweetened cocoa powder.
Tips
- For extra flavor, add a dash of cinnamon to the pudding.
- Let the pudding chill for several hours to allow the flavors to meld and the wafers to soften.
