Not Yo’ Mama’s Banana Pudding

Ingredients

For the Pudding

  • 2 cups heavy whipping cream
  • 1 ½ cups unsweetened almond milk
  • 4 large egg yolks
  • ¾ cup granulated erythritol or keto-friendly sweetener (adjust to taste)
  • 1 teaspoon banana extract (for flavor without carbs)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon xanthan gum (for thickening)

For the Whipped Cream Layer

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered erythritol
  • ½ teaspoon vanilla extract

For the Cookie Layer

  • Keto vanilla wafers or almond flour cookies (store-bought or homemade — see below)

Instructions

Step 1: Prepare the Keto Vanilla Wafers (Optional)

If you don’t have keto-friendly cookies, make these simple wafers:

  • Ingredients:
    • 1 cup almond flour
    • ¼ cup melted butter
    • 3 tablespoons erythritol
    • ½ teaspoon vanilla extract
  • Instructions:
    1. Preheat the oven to 350°F (175°C).
    2. Mix almond flour, melted butter, erythritol, and vanilla extract.
    3. Scoop small spoonfuls onto a baking sheet lined with parchment paper and flatten into thin rounds.
    4. Bake for 10-12 minutes until golden brown. Let them cool and set aside.

Step 2: Make the Pudding
  1. In a saucepan over medium heat, combine heavy cream, almond milk, and sweetener.
  2. In a separate bowl, whisk the egg yolks. Gradually temper the yolks by adding a small amount of the hot cream mixture while whisking continuously.
  3. Slowly pour the tempered yolks back into the saucepan while stirring.
  4. Cook for 4-5 minutes, stirring constantly, until thickened.
  5. Remove from heat and add banana and vanilla extracts. Sprinkle xanthan gum and whisk well.
  6. Let it cool to room temperature, then refrigerate for at least 1 hour to thicken further.

Step 3: Prepare the Whipped Cream
  1. In a chilled bowl, beat heavy cream, powdered erythritol, and vanilla extract until stiff peaks form.

Step 4: Assemble the Pudding
  1. In a large dish or individual serving cups, layer keto vanilla wafers at the bottom.
  2. Add a layer of banana-flavored pudding on top.
  3. Spread a layer of whipped cream over the pudding.
  4. Repeat the layers until all ingredients are used, finishing with a whipped cream layer.
  5. Garnish with crushed keto wafers or a sprinkle of unsweetened cocoa powder.

Tips

  • For extra flavor, add a dash of cinnamon to the pudding.
  • Let the pudding chill for several hours to allow the flavors to meld and the wafers to soften.
