No-Bake Keto Chocolate Cheesecake

Ingredients:

Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or your preferred keto-friendly sweetener)
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Filling:

  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup sugar-free dark chocolate chips, melted (or use a keto chocolate bar)
  • Pinch of salt

Topping (optional):

  • Shaved dark chocolate (sugar-free) or cocoa nibs
  • Whipped cream (sugar-free)

Instructions:

For the Crust:

  1. Prepare the Crust:
    • In a medium bowl, combine the almond flour, cocoa powder, erythritol, and salt.
    • Add in the melted butter and vanilla extract, stirring until the mixture is well combined and slightly crumbly.
  2. Form the Crust:
    • Press the crust mixture firmly into the bottom of a 9-inch springform pan or pie dish. Use a spoon to compact it evenly.
    • Place the crust in the freezer while you make the filling to set it.

For the Filling:

  1. Whip the Cream:
    • In a large mixing bowl, use an electric mixer to beat the heavy cream until stiff peaks form. Set aside.
  2. Cream Cheese Mixture:
    • In another bowl, beat the softened cream cheese with the powdered erythritol and vanilla extract until smooth and creamy.
  3. Add Cocoa Powder and Chocolate:
    • Add the unsweetened cocoa powder and melted sugar-free chocolate to the cream cheese mixture. Beat again until fully combined.
  4. Fold in Whipped Cream:
    • Gently fold the whipped cream into the chocolate cream cheese mixture until smooth and fully combined. Be careful not to deflate the whipped cream.

Assemble the Cheesecake:

  1. Fill the Crust:
    • Remove the crust from the freezer and spread the cheesecake filling evenly on top of it.
  2. Chill:
    • Refrigerate the cheesecake for at least 4 hours, or ideally overnight, to allow it to set and firm up.

For the Topping (optional):

  1. Garnish:
    • Once set, top the cheesecake with shaved sugar-free dark chocolate or cocoa nibs for a crunchy, chocolaty finish.
    • You can also add some fresh whipped cream if desired.
