No-Bake Keto Chocolate Cheesecake

Ingredients:
Crust:
- 1 1/2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol (or your preferred keto-friendly sweetener)
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Filling:
- 16 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 3/4 cup sugar-free dark chocolate chips, melted (or use a keto chocolate bar)
- Pinch of salt
Topping (optional):
- Shaved dark chocolate (sugar-free) or cocoa nibs
- Whipped cream (sugar-free)
Instructions:
For the Crust:
- Prepare the Crust:
- In a medium bowl, combine the almond flour, cocoa powder, erythritol, and salt.
- Add in the melted butter and vanilla extract, stirring until the mixture is well combined and slightly crumbly.
- Form the Crust:
- Press the crust mixture firmly into the bottom of a 9-inch springform pan or pie dish. Use a spoon to compact it evenly.
- Place the crust in the freezer while you make the filling to set it.
For the Filling:
- Whip the Cream:
- In a large mixing bowl, use an electric mixer to beat the heavy cream until stiff peaks form. Set aside.

- Add the unsweetened cocoa powder and melted sugar-free chocolate to the cream cheese mixture. Beat again until fully combined.
- Fold in Whipped Cream:
- Gently fold the whipped cream into the chocolate cream cheese mixture until smooth and fully combined. Be careful not to deflate the whipped cream.
Assemble the Cheesecake:

- Remove the crust from the freezer and spread the cheesecake filling evenly on top of it.
- Chill:
- Refrigerate the cheesecake for at least 4 hours, or ideally overnight, to allow it to set and firm up.
