Miracle Muffins


  • 1 box (about 15-18 ounces) of your favorite cake mix (sugar-free or low-fat varieties work well)
  • 1 can (15 ounces) canned pumpkin puree


  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the cake mix and canned pumpkin.
  3. Stir Well:
    • Stir the ingredients until well combined. The batter will be thick.
  4. Fill Muffin Cups:
    • Line a muffin tin with paper liners or spray with non-stick cooking spray.
    • Spoon the batter into the muffin cups, filling each cup about 2/3 full.
  5. Bake:
    • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Allow the muffins to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely.
  7. Serve:
    • Once cooled, serve your Miracle Muffins and enjoy!

These muffins are known for being moist and flavorful despite having only two ingredients. If you want to get creative, you can try different cake mix flavors like chocolate, spice, or carrot. You can also add in extras like chocolate chips, nuts, or dried fruit for variety.
