Mini Walnut Banana Bread Loaves are moist bread-like mini cakes with ripe mashed bananas as the main ingredients and topped with crunchy walnut.

  • 3 ripe bananas, peeled, mashed
  • 1/2 cup unsalted butter (113 gr), melted
  • 1/2 cup brown sugar (100 gr)
  • 1/2 cup granulated sugar (100 gr)
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour (300 gr)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (65 gr), for topping


  1. Preheat the oven to 355Β°F/180Β°C and lightly greaseΒ mini loaf pans.
  2. In a large bowl, combine melted butter, brown sugar, and granulated sugar using a mixer or whisk until well combined. Add eggs, vanilla extract, and mashed bananas, mix until well combined.
  3. In a separate bowl, combine all-purpose flour, baking soda, and salt together. Add dry ingredients to wet ingredients and mix until incorporated.
  4. Spoon the mixture evenly into the pan. Sprinkle the top with chopped walnuts.
  5. Bake for 25-30 minutes until toothpick inserted into the bread comes out clean. Let cool in the pan for 10 minutes. Turn the little loaves out onto the wire rack to finish cooling.
