Mini Cranberry Almond Burro Banana Breads


  • 6 Ripe Burro Bananas. ( Regular Bananas can be used also.)
  • ⅓ Cup Sugar in the Raw ( optional)
  • ⅓ Coconut Oil (or oil of your choice).
  • 2Tsp Almond Extract
  • 2 Cups Spelt Flour
  • ½ Tbsp Baking Soda.
  • 1Tsp Ground Ginger Powder
  • 1 Tsp Ground Cinnamon
  • ½ Tsp Cardamom Spice.
  • 1Tsp Salt.
  • ½ Cup Dried Cranberries.
  • ½ Cup Chopped Almonds.


  1. Preheat the oven to 360
  2. Lightly oil loaf pans add a piece of parchment paper along the center, with just a bit hanging out over each side. So much easier to remove from the pan.
  3. Peel Burro Banna and add them to a mixing bowl.
  4. Mash them well with a fork or potato masher.
  5. Add ingredients mentioned, EXCEPT the flour and Baking Soda, and mix well.
  6. Add flour and Baking soda.
  7. Stir everything together combining well. Don’t overmix. The batter will be too thick.
  8. Add dry Cranberries, Almonds and fold them in.
  9. Scrape the batter into loaf pans
  10. Sprinkle top with a little Brown sugar and place in the oven.
  11. Bake time 35 minutes, or until a toothpick inserted into the center comes out clean.
  12. Allow to cool off for 10 minutes before removing from pan.
