Melt In Your Mouth Beef Tips with Mushroom Gravy

Ingredients

  • 2 lbs beef tips (sirloin, chuck roast, or stew meat, cubed)
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced (button or cremini)
  • 1 ½ cups beef broth (low-sodium)
  • ½ cup heavy cream
  • 1 tbsp Worcestershire sauce (optional for flavor depth)
  • 1 tsp thyme (dried)
  • ½ tsp rosemary (dried)
  • ½ tsp xanthan gum (for thickening)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sear the Beef
    • Heat a large skillet over medium-high heat. Add olive oil and butter.
    • Season the beef tips with salt and pepper, then add to the skillet.
    • Sear on all sides until browned (about 2-3 minutes per side). Remove from skillet and set aside.
  2. Cook the Aromatics
    • In the same skillet, add the onions and sauté for 2-3 minutes until translucent.
    • Add garlic and mushrooms, cooking until mushrooms are tender and browned (about 5 minutes).
  3. Make the Gravy
    • Pour in the beef broth, scraping the bottom of the pan to deglaze it.
    • Stir in Worcestershire sauce, thyme, and rosemary.
    • Bring the mixture to a simmer.
  4. Thicken the Gravy
    • Sprinkle xanthan gum into the gravy, whisking constantly to avoid lumps.
    • Continue to simmer until the sauce thickens (about 3-5 minutes).
  5. Combine and Finish
    • Return the beef tips to the skillet.
    • Pour in the heavy cream and stir until well combined. Simmer for another 10-15 minutes, or until beef is tender and the sauce is rich.
  6. Adjust Seasoning
    • Taste and adjust salt and pepper if needed.
  7. Serve and Garnish
    • Sprinkle fresh parsley on top before serving.
    • Enjoy over mashed cauliflower, zucchini noodles, or on its own for a satisfying low-carb meal.

Tips

  • Use fresh herbs if available for enhanced flavor.
  • For extra richness, add a splash of dry red wine when deglazing the pan.
