Lightened Up Coffee Cake

Ingredients:

For the Streusel Topping and Filling:

  • 1/2 cup old-fashioned oats
  • 1/4 cup whole wheat flour
  • 2 tablespoons brown sugar (or a sugar substitute)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold unsalted butter, cut into small pieces

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar (or a sugar substitute)
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup non-fat Greek yogurt or low-fat sour cream

Instructions:

For the Streusel Topping and Filling:

  1. In a bowl, combine oats, whole wheat flour, brown sugar, and cinnamon for the streusel topping.
  2. Add cold butter pieces and use your fingers to mix until the mixture resembles coarse crumbs. Set aside.

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  2. In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together softened butter and sugar until light and fluffy.
  4. Add applesauce, eggs, and vanilla extract to the butter mixture. Beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt or sour cream. Begin and end with the dry ingredients.
  6. Spread half of the batter into the prepared pan. Sprinkle half of the streusel topping over the batter.
  7. Spoon the remaining batter over the streusel layer and smooth the top. Sprinkle the remaining streusel over the batter.
  8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the coffee cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
