Lightened Up Coffee Cake

Ingredients:
For the Streusel Topping and Filling:
- 1/2 cup old-fashioned oats
- 1/4 cup whole wheat flour
- 2 tablespoons brown sugar (or a sugar substitute)
- 1 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter, cut into small pieces
For the Cake:
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar (or a sugar substitute)
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup non-fat Greek yogurt or low-fat sour cream
Instructions:
For the Streusel Topping and Filling:
- In a bowl, combine oats, whole wheat flour, brown sugar, and cinnamon for the streusel topping.
- Add cold butter pieces and use your fingers to mix until the mixture resembles coarse crumbs. Set aside.
For the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
- In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In a large bowl, beat together softened butter and sugar until light and fluffy.
- Add applesauce, eggs, and vanilla extract to the butter mixture. Beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt or sour cream. Begin and end with the dry ingredients.
- Spread half of the batter into the prepared pan. Sprinkle half of the streusel topping over the batter.
- Spoon the remaining batter over the streusel layer and smooth the top. Sprinkle the remaining streusel over the batter.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow the coffee cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
