Lemon-Herb Chicken Potato Casserole

Ingredients

– 4 boneless, skinless chicken breasts, cut into bite-sized pieces
– 3 cups of peeled and cubed russet potatoes
– 1 lemon, zested and juiced
– 3 cloves of garlic, minced
– 1 tablespoon of olive oil
– 1 teaspoon of dried thyme
– 1 teaspoon of dried rosemary
– 1/2 teaspoon of paprika
– 1/2 cup of chicken broth
– 1 cup of heavy cream
– 1/2 cup of grated Parmesan cheese
– Salt and pepper to taste
– Fresh parsley for garnish (optional)

Directions

1. Preheat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish with a bit of olive oil.

2. In a large bowl, mix together the lemon zest, lemon juice, minced garlic, olive oil, thyme, rosemary, paprika, salt, and pepper. Add the chicken pieces and cubed potatoes, tossing to coat evenly with the herb mixture.

3. Transfer the chicken and potatoes into the prepared baking dish in an even layer.

4. Pour the chicken broth and heavy cream over the chicken and potatoes, and give the dish a gentle shake to let the liquids settle in.

5. Sprinkle the grated Parmesan cheese over the top and cover the dish with aluminum foil.

6. Bake in the preheated oven covered for 30 minutes. Then remove the foil and bake for an additional 20 to 25 minutes or until the chicken is cooked through and the potatoes are tender.

7. Take the casserole out of the oven and let it rest for a few minutes. Garnish with chopped fresh parsley if using, and serve warm to your awaiting family.

Variations & Tips

– For the little ones or those not keen on lemon, you can cut back on the lemon juice and substitute it with a bit more chicken broth.
– If someone in the family isn’t a fan of rosemary or thyme, don’t be afraid to use your favorite herb blend. Italian seasoning works nicely here too!
– Adding vegetables like broccoli, carrots, or bell peppers can turn this into an all-in-one meal and is a sneaky way to get those extra veggies in.
– If you’re looking to cut down on dairy, replace the heavy cream with a dairy-free alternative and skip the cheese or use a plant-based cheese instead.
