Lemon & Garlic Chicken Bites

Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 large lemon
- 1 teaspoon dried oregano (or fresh, if preferred)
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions:
1. Prepare the Chicken:
- Cut the chicken into bite-sized pieces. If you’re using chicken breasts, make sure they’re cut into even-sized chunks for uniform cooking.
2. Marinate the Chicken:
- In a bowl, combine the chicken pieces, olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper. Toss everything together until the chicken is evenly coated.
- Let the chicken marinate for at least 15 minutes (you can also marinate it for up to 2 hours in the fridge for more flavor).
3. Cook the Chicken:
- Heat a large skillet over medium-high heat. Once hot, add a bit more olive oil if needed.
- Add the marinated chicken pieces in a single layer. Cook for 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through (the internal temperature should reach 165°F or 75°C).
4. Garnish and Serve:
- Once the chicken is done, remove it from the skillet and place it on a serving plate.
- Sprinkle fresh chopped parsley over the top for a burst of color and extra flavor. Serve with lemon wedges on the side for an extra squeeze of citrus.
Tips:
- You can add some heat by including a pinch of red pepper flakes to the marinade if you like a spicy kick.
- For extra crispy chicken bites, you can dust the chicken pieces with a little flour or cornstarch before cooking them.
