Keto Strawberry Cheesecake Cinnamon Rolls with Pecans

Ingredients:

For the Dough:

  • 2 cups mozzarella cheese, shredded
  • 3 oz cream cheese
  • 1 1/2 cups almond flour
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 large egg

For the Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup erythritol or preferred keto sweetener
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup pecans, chopped
  • 1 tsp ground cinnamon

For the Glaze:

  • 2 oz cream cheese, softened
  • 1/4 cup powdered erythritol or preferred keto sweetener
  • 1 tbsp heavy cream
  • 1/2 tsp vanilla extract

Instructions:

Dough Preparation:

  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and well combined.
  3. In a separate bowl, whisk together the almond flour, erythritol, baking powder, vanilla extract, and salt.
  4. Add the dry ingredients and the egg to the melted cheese mixture. Mix until a dough forms. You may need to knead it with your hands to fully incorporate the ingredients.

Filling Preparation:

  1. In a small bowl, mix the softened cream cheese and erythritol until smooth.
  2. Stir in the chopped strawberries, pecans, and ground cinnamon.

Assembly:

  1. Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4 inch thick.
  2. Spread the cream cheese mixture evenly over the dough, leaving a small border around the edges.
  3. Carefully roll up the dough from one of the longer sides, like a jelly roll.
  4. Cut the rolled dough into 1-inch thick slices.
  5. Place the slices in a greased baking dish, leaving a little space between each roll.
  6. Bake for 20-25 minutes, or until the rolls are golden brown.

Glaze Preparation:

  1. While the rolls are baking, prepare the glaze by mixing together the softened cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth.
  2. Once the rolls are done baking, remove them from the oven and let them cool for a few minutes.
  3. Drizzle the glaze over the warm rolls.
