Keto Strawberries and Cream Chia Pudding
Ingredients:
- Chia Pudding:
- 1 cup unsweetened almond milk (or any other low-carb milk alternative)
- 1/4 cup chia seeds
- 1-2 tbsp erythritol or other keto-friendly sweetener (adjust to taste)
- 1 tsp vanilla extract
- Strawberries and Cream:
- 1/2 cup fresh strawberries, sliced
- 1/2 cup heavy cream
- 1-2 tbsp erythritol or other keto-friendly sweetener (adjust to taste)
- 1/2 tsp vanilla extract
Instructions:
- Prepare the Chia Pudding:
- In a medium-sized bowl, combine the almond milk, chia seeds, erythritol, and vanilla extract.
- Stir well to combine, making sure the chia seeds are evenly distributed.
- Let the mixture sit for about 10-15 minutes, then stir again to prevent the seeds from clumping.
- Cover the bowl and refrigerate for at least 2 hours, or overnight, until it thickens to a pudding-like consistency.
- Prepare the Strawberries and Cream:
- In a small bowl, combine the heavy cream, erythritol, and vanilla extract.
- Whisk until the sweetener is dissolved and the mixture is well combined.
- Assemble the Pudding:
- Once the chia pudding has set, give it a good stir.
- Divide the pudding into serving bowls or jars.
- Top with sliced strawberries.
- Pour the sweetened cream over the strawberries.
- Serve:
- Enjoy immediately, or refrigerate for up to 2 days.
Tips:
- Adjust the sweetness to your taste by adding more or less erythritol.
- For added flavor, you can blend some of the strawberries with the cream to make a strawberry cream layer.
