Keto Strawberries and Cream Chia Pudding

Ingredients:

  • Chia Pudding:
    • 1 cup unsweetened almond milk (or any other low-carb milk alternative)
    • 1/4 cup chia seeds
    • 1-2 tbsp erythritol or other keto-friendly sweetener (adjust to taste)
    • 1 tsp vanilla extract
  • Strawberries and Cream:
    • 1/2 cup fresh strawberries, sliced
    • 1/2 cup heavy cream
    • 1-2 tbsp erythritol or other keto-friendly sweetener (adjust to taste)
    • 1/2 tsp vanilla extract

Instructions:

  1. Prepare the Chia Pudding:
    1. In a medium-sized bowl, combine the almond milk, chia seeds, erythritol, and vanilla extract.
    2. Stir well to combine, making sure the chia seeds are evenly distributed.
    3. Let the mixture sit for about 10-15 minutes, then stir again to prevent the seeds from clumping.
    4. Cover the bowl and refrigerate for at least 2 hours, or overnight, until it thickens to a pudding-like consistency.
  2. Prepare the Strawberries and Cream:
    1. In a small bowl, combine the heavy cream, erythritol, and vanilla extract.
    2. Whisk until the sweetener is dissolved and the mixture is well combined.
  3. Assemble the Pudding:
    1. Once the chia pudding has set, give it a good stir.
    2. Divide the pudding into serving bowls or jars.
    3. Top with sliced strawberries.
    4. Pour the sweetened cream over the strawberries.
  4. Serve:
    • Enjoy immediately, or refrigerate for up to 2 days.

Tips:

  • Adjust the sweetness to your taste by adding more or less erythritol.
  • For added flavor, you can blend some of the strawberries with the cream to make a strawberry cream layer.
