Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1/4 cup flaxseed meal (optional, for extra texture)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 4 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup warm water (adjust as needed)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). If you’re using a loaf pan, line it with parchment paper or grease it lightly.
  2. Mix Dry Ingredients:
    • In a large bowl, combine almond flour, coconut flour, psyllium husk powder, flaxseed meal (if using), baking powder, baking soda, and salt. Mix well.
  3. Combine Wet Ingredients:
    • In a separate bowl, whisk together the eggs, apple cider vinegar, and olive oil.
  4. Incorporate Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients. Mix until combined. The dough will be thick.
  5. Add Water:
    • Gradually add warm water, a little at a time, until the dough reaches a consistency that holds together but isn’t too sticky. It should be moist but manageable.
  6. Shape the Dough:
    • Transfer the dough into your prepared loaf pan or shape it into a free-form loaf if you prefer. Smooth the top with a spatula.
  7. Bake:
    • Bake in the preheated oven for 45-55 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. This helps it firm up and makes slicing easier.

Tips

  • For Tanginess: To enhance the sourdough flavor, you can add a tablespoon of plain yogurt or sour cream to the wet ingredients. However, this will slightly increase the carbs.
  • Storage: Store the bread in an airtight container at room temperature for a few days, or slice and freeze for longer storage.
