  • ½ cup sugar-free caramel sauce (you can find recipes for homemade versions online, using sweeteners like erythritol and heavy cream)

Chocolate Layer:

  • ½ cup sugar-free chocolate chips
  • 2 tbsp heavy cream

Toppings:

  • ½ cup salted peanuts, chopped
  • Sugar-free whipped cream (optional, for serving)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Prepare the Crust:
    • In a bowl, mix almond flour, cocoa powder, powdered erythritol, and melted butter until well combined.
    • Press the mixture into the bottom of a greased 9-inch springform pan to form the crust. Make sure it’s evenly distributed and compacted.
  3. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Add powdered erythritol and vanilla extract, and beat until well combined.
    • Add eggs, one at a time, mixing well after each addition.
    • Stir in sour cream until smooth.
  4. Assemble the Cheesecake:
    • Pour half of the cheesecake filling over the crust in the pan.
    • Drizzle half of the caramel sauce over the filling.
    • Pour the remaining cheesecake filling over the caramel layer.
    • Use a knife to swirl the caramel sauce through the cheesecake filling for a marbled effect.
  5. Bake the Cheesecake:
    • Place the cheesecake in the preheated oven and bake for 45-50 minutes, or until the center is almost set.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.
  6. Prepare the Chocolate Topping:
    • In a microwave-safe bowl, combine the sugar-free chocolate chips and heavy cream.
    • Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
    • Let it cool slightly.
  7. Add Toppings:
    • Once the cheesecake has cooled, spread the remaining caramel sauce over the top.
    • Drizzle the melted chocolate over the caramel layer.
    • Sprinkle chopped salted peanuts evenly over the top.
  8. Chill and Serve:
    • Refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.
    • Before serving, release the cheesecake from the springform pan.
