KETO SNICKERS CHEESECAKE

- ¾ cup powdered erythritol (adjust to taste)

Caramel Layer:
- ½ cup sugar-free caramel sauce (you can find recipes for homemade versions online, using sweeteners like erythritol and heavy cream)
Chocolate Layer:
- ½ cup sugar-free chocolate chips
- 2 tbsp heavy cream
Toppings:
- ½ cup salted peanuts, chopped
- Sugar-free whipped cream (optional, for serving)

Instructions:
- Preheat Oven: Preheat your oven to 325°F (160°C).
- Prepare the Crust:
- In a bowl, mix almond flour, cocoa powder, powdered erythritol, and melted butter until well combined.
- Press the mixture into the bottom of a greased 9-inch springform pan to form the crust. Make sure it’s evenly distributed and compacted.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add powdered erythritol and vanilla extract, and beat until well combined.
- Add eggs, one at a time, mixing well after each addition.
- Stir in sour cream until smooth.
- Assemble the Cheesecake:
- Pour half of the cheesecake filling over the crust in the pan.
- Drizzle half of the caramel sauce over the filling.
- Pour the remaining cheesecake filling over the caramel layer.
- Use a knife to swirl the caramel sauce through the cheesecake filling for a marbled effect.
- Bake the Cheesecake:
- Place the cheesecake in the preheated oven and bake for 45-50 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.
- Prepare the Chocolate Topping:
- In a microwave-safe bowl, combine the sugar-free chocolate chips and heavy cream.
- Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Let it cool slightly.
- Add Toppings:
- Once the cheesecake has cooled, spread the remaining caramel sauce over the top.
- Drizzle the melted chocolate over the caramel layer.
- Sprinkle chopped salted peanuts evenly over the top.
- Chill and Serve:
- Refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.
- Before serving, release the cheesecake from the springform pan.
- Slice and serve chilled, optionally with sugar-free whipped cream.
