Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Mix the Cheeses: In a microwave-safe bowl, combine the shredded mozzarella and grated Parmesan cheese. Microwave on high for about 1 minute, then stir. Continue to microwave in 30-second intervals until the cheese is completely melted and smooth.
Combine Dry Ingredients: In a separate bowl, mix the almond flour, baking powder, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
Add Eggs: Beat the eggs in another bowl and then add them to the dry ingredients. Mix until combined.
Combine Everything: Pour the melted cheese into the egg mixture and stir until everything is well combined. The mixture will be sticky.
Form the Puffs: Using a spoon or cookie scoop, drop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake in the preheated oven for about 12-15 minutes, or until the puffs are golden brown and puffed up.
Cool and Serve: Allow the bread puffs to cool slightly before serving. They can be garnished with chopped fresh parsley or basil if desired.
