Ingredients:

  • 1 cup buttermilk (or unsweetened almond milk mixed with 1 tablespoon lemon juice as a low-carb substitute)
  • 1 tablespoon hot sauce (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Coating:

  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Baking:

  • 2 tablespoons olive oil or melted butter

Instructions:

  1. Marinate the Chicken:
    • In a large bowl or resealable plastic bag, combine the buttermilk (or almond milk mixture), hot sauce (if using), garlic powder, onion powder, paprika, salt, and black pepper.
    • Add the chicken pieces and coat them thoroughly. Cover the bowl or seal the bag and refrigerate for at least 1 hour, or overnight for the best flavor.
  2. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. For extra crispiness, place a wire rack on top of the baking sheet and spray it lightly with cooking spray.

    • Bake in the preheated oven for 35-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). The cooking time may vary depending on the size of the chicken pieces.
  6. Serve:
    • Allow the chicken to rest for a few minutes before serving to let the juices redistribute.
