Keto Oreo cheesecakes
Ingredients
For the Crust:
- 1 cup almond flour
- 2 tbsp granulated erythritol or other keto-friendly sweetener
- 1/4 cup melted butter
For the Cheesecake Filling:
- 16 oz (2 cups) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup granulated erythritol or other keto-friendly sweetener
- 2 large eggs
- 1 tsp vanilla extract
- 8-10 keto-friendly chocolate sandwich cookies (such as keto Oreos), crushed

Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners or use a silicone muffin pan.
- Prepare the Crust:
- In a bowl, combine the almond flour, erythritol, and melted butter. Mix until well combined.
- Press the mixture into the bottom of each muffin tin cup to form the crust. Use the back of a spoon or a flat-bottomed glass to press it down firmly.
- Bake for 8 minutes, then remove from the oven and let it cool slightly.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the sour cream, erythritol, eggs, and vanilla extract. Beat until well combined and smooth.
- Gently fold in the crushed keto-friendly cookies.
- Assemble:
- Spoon the cheesecake filling over the partially baked crusts in the muffin tin.
- Smooth the tops with a spatula.
- Bake:
- Bake in the preheated oven for 18-22 minutes, or until the centers are set and the edges are slightly golden.
- Turn off the oven and leave the cheesecakes inside with the door slightly ajar for 1 hour. This helps to prevent cracking.
- Chill:
- After the hour, remove the cheesecakes from the oven and let them cool to room temperature.
- Refrigerate for at least 2-3 hours, or overnight, before serving to allow them to firm up.
- Serve:
- Remove the cheesecakes from the muffin tin and peel off the paper liners if used.
- Enjoy chilled!

- Keto-Friendly Cookies: If you can’t find keto-friendly chocolate sandwich cookies, you can make your own or use a keto chocolate crust recipe instead.
