Ingredients

For the Crust:

  • 1 cup almond flour
  • 2 tbsp granulated erythritol or other keto-friendly sweetener
  • 1/4 cup melted butter

For the Cheesecake Filling:

  • 16 oz (2 cups) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup granulated erythritol or other keto-friendly sweetener
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8-10 keto-friendly chocolate sandwich cookies (such as keto Oreos), crushed

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners or use a silicone muffin pan.
  2. Prepare the Crust:
    • In a bowl, combine the almond flour, erythritol, and melted butter. Mix until well combined.
    • Press the mixture into the bottom of each muffin tin cup to form the crust. Use the back of a spoon or a flat-bottomed glass to press it down firmly.
    • Bake for 8 minutes, then remove from the oven and let it cool slightly.
  3. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the sour cream, erythritol, eggs, and vanilla extract. Beat until well combined and smooth.
    • Gently fold in the crushed keto-friendly cookies.
  4. Assemble:
    • Spoon the cheesecake filling over the partially baked crusts in the muffin tin.
    • Smooth the tops with a spatula.
  5. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until the centers are set and the edges are slightly golden.
    • Turn off the oven and leave the cheesecakes inside with the door slightly ajar for 1 hour. This helps to prevent cracking.
  6. Chill:
    • After the hour, remove the cheesecakes from the oven and let them cool to room temperature.
    • Refrigerate for at least 2-3 hours, or overnight, before serving to allow them to firm up.
  7. Serve:
    • Remove the cheesecakes from the muffin tin and peel off the paper liners if used.
    • Enjoy chilled!

  • Keto-Friendly Cookies: If you can’t find keto-friendly chocolate sandwich cookies, you can make your own or use a keto chocolate crust recipe instead.
  • Toppings: You can top with a dollop of whipped cream or a few additional crushed keto cookies for extra flair.
