keto-mini-cheese-shell-tacos
Ingredients:
For the cheese shells:
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon chili powder (optional)
- 1/2 teaspoon garlic powder (optional)
- Salt and pepper to taste
For the filling:
- Cooked ground beef or turkey
- Taco seasoning (check for low-carb or keto-friendly option)
- Shredded lettuce
- Diced tomatoes
- Diced onions (optional)
- Sour cream (optional)
- Guacamole (optional)

Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a mixing bowl, combine the shredded cheddar cheese and shredded mozzarella cheese. Add in the optional chili powder, garlic powder, salt, and pepper. Stir to combine.
- Scoop about 2 tablespoons of the cheese mixture onto the prepared baking sheet, spacing them out evenly. Flatten and shape them into small circles, about 3-4 inches in diameter.
- Bake the cheese shells in the preheated oven for 5-7 minutes, or until the edges are golden brown and crispy. Keep an eye on them to prevent burning.
- Once done, remove the cheese shells from the oven and let them cool for a minute or two. They will crisp up further as they cool.
- While the cheese shells are cooling, prepare your taco filling. Cook the ground beef or turkey in a skillet over medium heat until fully cooked. Drain any excess fat and add taco seasoning according to package instructions.
- To assemble the mini cheese shell tacos, place a spoonful of the cooked taco meat onto each cheese shell. Top with shredded lettuce, diced tomatoes, onions (if using), sour cream, and guacamole as desired.
