Keto Lemon Garlic Roasted Mushrooms

Ingredients:-

  • 1 lb (450g) mushrooms, cleaned and halved
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions:-

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, parsley, salt, and pepper. Mix well.
  3. Add the halved mushrooms to the bowl and toss until they are evenly coated with the mixture.
  4. Spread the mushrooms out on a baking sheet lined with parchment paper in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, or until the mushrooms are tender and golden brown, stirring halfway through.
  6. Once done, remove from the oven and garnish with additional chopped parsley if desired.
  7. Serve hot as a side dish or a delicious keto-friendly appetizer…
