Keto Lemon Garlic Roasted Mushrooms

Ingredients:-
- 1 lb (450g) mushrooms, cleaned and halved
- 2 tablespoons olive oil
- Zest of 1 lemon
- Juice of 1 lemon
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions:-
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, parsley, salt, and pepper. Mix well.
- Add the halved mushrooms to the bowl and toss until they are evenly coated with the mixture.
- Spread the mushrooms out on a baking sheet lined with parchment paper in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until the mushrooms are tender and golden brown, stirring halfway through.
- Once done, remove from the oven and garnish with additional chopped parsley if desired.
