Keto Large Flour Tortillas

image 42

Ingredients:

  • 2 cups almond flour (preferably finely ground)
  • 2 tbsp coconut flour
  • 1/2 tsp xanthan gum (optional, for elasticity)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 2 tbsp melted butter (or olive oil)
  • 2 tbsp water (or more if needed)
  • 1 tbsp apple cider vinegar (helps with elasticity and texture)

Instructions:

  1. Prepare the Dough:
In a large bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and salt. Mix well.
  2. Add Wet Ingredients:
Add the eggs, melted butter, water, and apple cider vinegar to the dry ingredients. Stir everything together until a dough forms. If the dough seems too dry, add a little more water, 1 tablespoon at a time, until it reaches a smooth, pliable consistency.
  3. Rest the Dough:
Let the dough rest for about 10-15 minutes. This helps the flour absorb the liquid and makes the dough easier to handle.
  4. Divide and Roll the Dough:
Divide the dough into 6-8 equal portions, depending on how large you want your tortillas. Roll each portion into a ball.
  5. Roll Out the Tortillas:
Place a piece of parchment paper or wax paper on your countertop. Using a rolling pin (or even your hands), flatten each dough ball into a thin, round tortilla. You can also place another sheet of parchment paper on top to prevent sticking while rolling.
  6. Cook the Tortillas:
Heat a non-stick skillet or cast-iron pan over medium heat. Once hot, add one tortilla at a time to the pan. Cook for about 1-2 minutes on each side, or until you see light golden spots and the edges start to lift up. Flip and cook the other side until golden brown.
  7. Cool and Serve:
Transfer the cooked tortillas to a plate and cover them with a clean towel to keep them soft. Repeat the process with the remaining dough balls.

Tips:

  • If the dough is too sticky, you can dust it lightly with extra almond flour while rolling it out.
  • You can store the tortillas in an airtight container for up to 3-4 days or freeze them for longer storage. To reheat, simply warm them up in a skillet or microwave.
  • These tortillas are great for wraps, tacos, quesadillas, or any other recipe that calls for flour tortillas but with fewer carbs!

Enjoy your delicious and Keto-friendly flour tortillas!
