Keto Large Flour Tortillas

Ingredients:
- 2 cups almond flour (preferably finely ground)
- 2 tbsp coconut flour
- 1/2 tsp xanthan gum (optional, for elasticity)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 2 tbsp melted butter (or olive oil)
- 2 tbsp water (or more if needed)
- 1 tbsp apple cider vinegar (helps with elasticity and texture)
Instructions:
- Prepare the Dough:
In a large bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and salt. Mix well. - Add Wet Ingredients:
Add the eggs, melted butter, water, and apple cider vinegar to the dry ingredients. Stir everything together until a dough forms. If the dough seems too dry, add a little more water, 1 tablespoon at a time, until it reaches a smooth, pliable consistency. - Rest the Dough:
Let the dough rest for about 10-15 minutes. This helps the flour absorb the liquid and makes the dough easier to handle. - Divide and Roll the Dough:
Divide the dough into 6-8 equal portions, depending on how large you want your tortillas. Roll each portion into a ball. - Roll Out the Tortillas:
Place a piece of parchment paper or wax paper on your countertop. Using a rolling pin (or even your hands), flatten each dough ball into a thin, round tortilla. You can also place another sheet of parchment paper on top to prevent sticking while rolling. - Cook the Tortillas:
Heat a non-stick skillet or cast-iron pan over medium heat. Once hot, add one tortilla at a time to the pan. Cook for about 1-2 minutes on each side, or until you see light golden spots and the edges start to lift up. Flip and cook the other side until golden brown. - Cool and Serve:
Transfer the cooked tortillas to a plate and cover them with a clean towel to keep them soft. Repeat the process with the remaining dough balls.
Tips:
- If the dough is too sticky, you can dust it lightly with extra almond flour while rolling it out.
- You can store the tortillas in an airtight container for up to 3-4 days or freeze them for longer storage. To reheat, simply warm them up in a skillet or microwave.
- These tortillas are great for wraps, tacos, quesadillas, or any other recipe that calls for flour tortillas but with fewer carbs!
