Keto jambalaya

1 onion diced
4 stalks celery diced
2 red bell peppers diced
1 clove garlic chopped
4 can Rotel tomatoes (or 8 plum tomatoes diced)
1 pound chicken breast
1 pound hot sausage
1 pound shrimp peeled
3 bags cauliflower rice
Olive oil
Cajun seasoning
Crushed red pepper
Preheat oven to 350 brown sausage and chicken separately
Meanwhile in large pan
Sauté onion, garlic and celery in olive oil for about 4 minutes. Add diced peppers and cook until tender. Add cauliflower rice and Rotel tomatoes (or diced tomatoes) and simmer
Add about 1 tablespoon Cajun seasoning and crushedred pepper(more or less to taste)
Lower temp and let simmer
In a separate pan add olive oil and Cajun seasoning, sauté shrimp until pink and then add to rice mix.
Take chicken and sausage out of oven and slice, adding to pan with rice and shrimp. Cover and simmer on low for about 5 minutes or until chicken is cooked through
