Keto Homemade pepperoni garlic bread

Ingredients:

For the Dough:

  • 1 1/2 cups almond flour
  • 2 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 2 large eggs
  • 1 teaspoon baking powder

For the Topping:

  • 2-3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pepperoni slices (check for low-carb options)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave for 1-2 minutes, stirring every 30 seconds until they are completely melted and well combined.
  3. In a separate bowl, mix the almond flour and baking powder.
  4. Add the almond flour mixture and the eggs to the melted cheese mixture. Mix well to form a dough. You can use your hands or a spatula.
  5. Place the dough on a parchment paper-lined baking sheet. Use another piece of parchment paper on top to roll out the dough into a rectangular shape, about 1/4 inch thick.
  6. Remove the top piece of parchment paper. Sprinkle the minced garlic, grated Parmesan cheese, pepperoni slices, dried oregano, and crushed red pepper flakes over the dough.
  7. Carefully roll up the dough lengthwise, creating a log. Seal the ends.
  8. Place the log on the baking sheet and bake in the preheated oven for about 20-25 minutes or until it’s golden brown and cooked through.
  9. Remove from the oven and let it cool for a few minutes. Slice into individual pieces, and garnish with fresh basil or parsley, if desired.
