Keto Homemade pepperoni garlic bread
Ingredients:
For the Dough:
- 1 1/2 cups almond flour
- 2 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
- 1 teaspoon baking powder
For the Topping:
- 2-3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup pepperoni slices (check for low-carb options)
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave for 1-2 minutes, stirring every 30 seconds until they are completely melted and well combined.
- In a separate bowl, mix the almond flour and baking powder.
- Add the almond flour mixture and the eggs to the melted cheese mixture. Mix well to form a dough. You can use your hands or a spatula.
- Place the dough on a parchment paper-lined baking sheet. Use another piece of parchment paper on top to roll out the dough into a rectangular shape, about 1/4 inch thick.
- Remove the top piece of parchment paper. Sprinkle the minced garlic, grated Parmesan cheese, pepperoni slices, dried oregano, and crushed red pepper flakes over the dough.
- Carefully roll up the dough lengthwise, creating a log. Seal the ends.
- Place the log on the baking sheet and bake in the preheated oven for about 20-25 minutes or until it’s golden brown and cooked through.
- Remove from the oven and let it cool for a few minutes. Slice into individual pieces, and garnish with fresh basil or parsley, if desired.
