Ingredients:
- 4 large eggs (separated into yolks and whites)
- 1/2 cup cream cheese (softened)
- 1/4 cup butter (melted)
- 1/4 cup almond flour
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- Pinch of salt
Instructions:
- Preheat oven: Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Mix wet ingredients: In a bowl, whisk together the egg yolks, softened cream cheese, melted butter, vanilla extract, and sweetener until smooth.
- Add dry ingredients: Stir in almond flour, baking powder, and a pinch of salt. Mix until fully combined.
- Beat egg whites: In a separate bowl, whisk the egg whites until stiff peaks form. This will give your cake its cloud-like texture.
- Fold together: Gently fold the egg whites into the cream cheese mixture. Be careful not to deflate the egg whites—fold until combined.
- Bake: Spoon the mixture onto your baking sheet, shaping it into a round or rectangular form. Bake for 25-30 minutes or until the top is golden brown.
- Cool: Allow the cake to cool before slicing. It will be soft and fluffy!
