Keto Chocolate Chip Waffles
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or another keto sweetener of your choice)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened almond milk
- 1/4 cup melted butter or coconut oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips
Instructions:
- Preheat Waffle Maker: Heat your waffle maker according to the manufacturer’s instructions.
- Mix Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, mix the almond milk, melted butter (or coconut oil), eggs, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the sugar-free chocolate chips.
- Cook Waffles: Lightly grease the waffle maker with cooking spray or a bit of melted butter. Pour the batter into the preheated waffle maker and cook according to the manufacturer’s instructions, usually for about 3-5 minutes, until the waffles are golden brown and crisp.
