Keto Chocolate Chip Bars

Ingredients

  • 2 cups almond flour
  • 1/2 cup melted butter (or coconut oil for dairy-free)
  • 1/2 cup sugar-free sweetener (like erythritol or monk fruit)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar-free chocolate chips (like Lily’s)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the almond flour, sweetener, baking powder, and salt.
  3. Add Wet Ingredients: Add in the melted butter, egg, and vanilla extract. Stir until all ingredients are well combined, forming a thick dough.
  4. Add Chocolate Chips: Fold in the chocolate chips, saving a few to sprinkle on top.
  5. Press into Pan: Press the dough evenly into the prepared baking pan. Press the remaining chocolate chips on top.
  6. Bake: Bake for 15-20 minutes, or until the edges are golden and the center is set.
  7. Cool and Slice: Allow the bars to cool completely in the pan before slicing into squares. They firm up as they cool.
