Keto Chocolate Chip Bars
Ingredients
- 2 cups almond flour
- 1/2 cup melted butter (or coconut oil for dairy-free)
- 1/2 cup sugar-free sweetener (like erythritol or monk fruit)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar-free chocolate chips (like Lily’s)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Combine Dry Ingredients: In a large mixing bowl, whisk together the almond flour, sweetener, baking powder, and salt.
- Add Wet Ingredients: Add in the melted butter, egg, and vanilla extract. Stir until all ingredients are well combined, forming a thick dough.
- Add Chocolate Chips: Fold in the chocolate chips, saving a few to sprinkle on top.
- Press into Pan: Press the dough evenly into the prepared baking pan. Press the remaining chocolate chips on top.
- Bake: Bake for 15-20 minutes, or until the edges are golden and the center is set.
- Cool and Slice: Allow the bars to cool completely in the pan before slicing into squares. They firm up as they cool.
