Keto Chicken Fritters

Ingredients

  • Chicken Mixture:
    • 1 lb (450g) ground chicken
    • 1/2 cup grated mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1/4 cup almond flour
    • 2 tbsp chopped fresh parsley
    • 2 cloves garlic, minced
    • 1/2 tsp onion powder
    • 1/2 tsp smoked paprika
    • Salt and pepper to taste
  • Cooking:
    • 2-3 tbsp olive oil or avocado oil for frying

Instructions

  1. Prepare the Chicken Mixture:
    • In a large mixing bowl, combine the ground chicken, mozzarella cheese, Parmesan cheese, egg, almond flour, chopped parsley, minced garlic, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Form the Fritters:
    • Using your hands or a spoon, scoop about 2 tablespoons of the chicken mixture and shape it into a patty. Repeat with the remaining mixture.
  3. Cook the Fritters:
    • Heat the olive oil or avocado oil in a large skillet over medium heat. Once the oil is hot, add the chicken fritters to the skillet. Cook the fritters in batches, making sure not to overcrowd the pan. Fry each side for about 4-5 minutes or until golden brown and cooked through.
  4. Serve:
    • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve the fritters hot, garnished with additional parsley if desired.
