Keto Cherry Pie Bars
Ingredients:
- For the crust:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup sweetener (like erythritol or monk fruit)
- 1/2 cup butter, melted
- 1 egg
- 1 tsp vanilla extract
- A pinch of salt
- For the cherry filling:
- 2 cups frozen cherries (unsweetened)
- 1/4 cup sweetener (erythritol, monk fruit, or stevia)
- 1 tbsp chia seeds (for thickening)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- A pinch of salt
- For the crumble topping:
- 1/2 cup almond flour
- 1/4 cup unsweetened shredded coconut (optional)
- 2 tbsp butter, melted
- 2 tbsp sweetener
- A pinch of salt
Instructions:
- Prepare the crust:
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, sweetener, and a pinch of salt.
- Add the melted butter, egg, and vanilla extract. Stir until the dough forms.
- Press the dough into the bottom of the prepared baking dish to form an even layer.
- Bake for 10–12 minutes or until the crust is lightly golden. Let it cool while you prepare the filling.
- Make the cherry filling:
- In a saucepan, combine the cherries, sweetener, chia seeds, lemon juice, vanilla, and salt.
- Cook over medium heat, stirring occasionally, until the cherries break down and the mixture thickens (about 10 minutes).
- Once thickened, remove from heat and let it cool slightly.
- Prepare the crumble topping:
- In a small bowl, combine almond flour, shredded coconut (optional), melted butter, sweetener, and a pinch of salt.
- Stir until the mixture resembles a crumbly texture.
- Assemble the bars:
- Once the crust has cooled, spread the cherry filling evenly over the crust.
- Sprinkle the crumble topping over the cherry layer.
- Bake the bars:
- Bake the assembled bars in the preheated oven for another 20–25 minutes, or until the topping is golden brown.
- Allow the bars to cool completely before cutting into squares.
- Serve and enjoy:
- Once cooled, slice into bars and enjoy a low-carb, keto-friendly treat!
Tips:
- For a stronger cherry flavor, you can add a bit of cherry extract to the filling.
- If you prefer a thicker crust, double the crust ingredients.
