Keto Cherry Pie Bars

Ingredients:

  • For the crust:
    • 2 cups almond flour
    • 1/4 cup coconut flour
    • 1/4 cup sweetener (like erythritol or monk fruit)
    • 1/2 cup butter, melted
    • 1 egg
    • 1 tsp vanilla extract
    • A pinch of salt
  • For the cherry filling:
    • 2 cups frozen cherries (unsweetened)
    • 1/4 cup sweetener (erythritol, monk fruit, or stevia)
    • 1 tbsp chia seeds (for thickening)
    • 1 tbsp lemon juice
    • 1 tsp vanilla extract
    • A pinch of salt
  • For the crumble topping:
    • 1/2 cup almond flour
    • 1/4 cup unsweetened shredded coconut (optional)
    • 2 tbsp butter, melted
    • 2 tbsp sweetener
    • A pinch of salt

Instructions:

  1. Prepare the crust:
    • Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
    • In a large bowl, mix the almond flour, coconut flour, sweetener, and a pinch of salt.
    • Add the melted butter, egg, and vanilla extract. Stir until the dough forms.
    • Press the dough into the bottom of the prepared baking dish to form an even layer.
    • Bake for 10–12 minutes or until the crust is lightly golden. Let it cool while you prepare the filling.
  2. Make the cherry filling:
    • In a saucepan, combine the cherries, sweetener, chia seeds, lemon juice, vanilla, and salt.
    • Cook over medium heat, stirring occasionally, until the cherries break down and the mixture thickens (about 10 minutes).
    • Once thickened, remove from heat and let it cool slightly.
  3. Prepare the crumble topping:
    • In a small bowl, combine almond flour, shredded coconut (optional), melted butter, sweetener, and a pinch of salt.
    • Stir until the mixture resembles a crumbly texture.
  4. Assemble the bars:
    • Once the crust has cooled, spread the cherry filling evenly over the crust.
    • Sprinkle the crumble topping over the cherry layer.
  5. Bake the bars:
    • Bake the assembled bars in the preheated oven for another 20–25 minutes, or until the topping is golden brown.
    • Allow the bars to cool completely before cutting into squares.
  6. Serve and enjoy:
    • Once cooled, slice into bars and enjoy a low-carb, keto-friendly treat!

Tips:

  • For a stronger cherry flavor, you can add a bit of cherry extract to the filling.
  • If you prefer a thicker crust, double the crust ingredients.
