Keto Cheeseburger Quesadillas

Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 4 low-carb tortillas (choose ones with fewer net carbs)
  • Salt and pepper to taste
  • Optional toppings: shredded lettuce, sugar-free ketchup, mustard

Instructions:

  1. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until it’s browned and cooked through. Drain excess grease if needed.
  2. Add Onions: Add diced onions to the skillet with the ground beef and cook until onions are softened and translucent.
  3. Season: Season the beef mixture with salt and pepper to taste.
  4. Assemble the Quesadillas: Lay out a tortilla and sprinkle some shredded cheese on half of it. Add a portion of the ground beef mixture on top of the cheese. Sprinkle diced tomatoes over the beef. Top with more shredded cheese.
  5. Fold and Cook: Fold the tortilla in half over the filling, creating a half-moon shape. Repeat with the remaining tortillas and filling.
  6. Cook the Quesadillas: Heat a clean skillet or griddle over medium heat. Place the assembled quesadilla onto the skillet and cook until the bottom is golden brown and the cheese is melted. Carefully flip and cook the other side until golden brown and the cheese is fully melted.
  7. Serve: Remove from heat and let cool slightly before slicing into wedges. Serve with optional toppings like shredded lettuce, sugar-free ketchup, or mustard.
