Keto Cauliflower Fried Rice

Ingredients:

  • 1 medium head of cauliflower, riced (approximately 4 cups)
  • 2 tablespoons avocado oil or coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as diced carrots, peas, bell peppers)
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce or tamari sauce (low-sodium if preferred)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ginger powder
  • Salt and pepper, to taste
  • Green onions, sliced (for garnish, optional)

Instructions:

  1. Prepare the cauliflower by removing the leaves and stem, and then cut it into florets. Use a food processor or a grater to rice the cauliflower into small, rice-like pieces. Set aside.
  2. Heat the avocado oil or coconut oil in a large skillet or wok over medium-high heat.
  3. Add the chopped onion and minced garlic to the pan and sauté for 2-3 minutes until the onion becomes translucent and fragrant.
  4. Add the mixed vegetables to the pan and stir-fry for an additional 3-4 minutes until they are slightly tender.
  5. Push the vegetables to one side of the pan, creating an empty space. Pour the beaten eggs into the empty space and scramble them until cooked through.
  6. Add the riced cauliflower to the pan and stir-fry for 5-6 minutes, or until the cauliflower is tender but still slightly crisp.
  7. In a small bowl, whisk together the soy sauce or tamari sauce, sesame oil, and ginger powder. Pour the sauce over the cauliflower mixture and stir-fry for an additional 2-3 minutes, ensuring that everything is evenly coated.
  8. Season with salt and pepper to taste. Adjust the seasoning and soy sauce as desired.
  9. Remove the Keto Cauliflower Fried Rice from the heat and garnish with sliced green onions, if desired.
