Keto Cauliflower Fried Rice

Ingredients:
- 1 medium head of cauliflower, riced (approximately 4 cups)
- 2 tablespoons avocado oil or coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as diced carrots, peas, bell peppers)
- 2 large eggs, lightly beaten
- 2 tablespoons soy sauce or tamari sauce (low-sodium if preferred)
- 1 tablespoon sesame oil
- 1/2 teaspoon ginger powder
- Salt and pepper, to taste
- Green onions, sliced (for garnish, optional)
Instructions:
- Prepare the cauliflower by removing the leaves and stem, and then cut it into florets. Use a food processor or a grater to rice the cauliflower into small, rice-like pieces. Set aside.
- Heat the avocado oil or coconut oil in a large skillet or wok over medium-high heat.
- Add the chopped onion and minced garlic to the pan and sauté for 2-3 minutes until the onion becomes translucent and fragrant.
- Add the mixed vegetables to the pan and stir-fry for an additional 3-4 minutes until they are slightly tender.
- Push the vegetables to one side of the pan, creating an empty space. Pour the beaten eggs into the empty space and scramble them until cooked through.
- Add the riced cauliflower to the pan and stir-fry for 5-6 minutes, or until the cauliflower is tender but still slightly crisp.
- In a small bowl, whisk together the soy sauce or tamari sauce, sesame oil, and ginger powder. Pour the sauce over the cauliflower mixture and stir-fry for an additional 2-3 minutes, ensuring that everything is evenly coated.
- Season with salt and pepper to taste. Adjust the seasoning and soy sauce as desired.
- Remove the Keto Cauliflower Fried Rice from the heat and garnish with sliced green onions, if desired.
