Ingredients:
- 1 cup unsalted butter
- 1 cup granulated erythritol or another keto-friendly sweetener
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

Instructions:
- Prepare the Pan: Line a baking sheet with parchment paper or a silicone mat.
- Melt the Butter: In a medium-sized saucepan over medium heat, melt the butter.
- Add Sweetener and Salt: Once the butter is melted, add the erythritol and salt. Stir continuously to combine.
- Cook the Mixture: Continue to cook the mixture over medium heat, stirring frequently. The mixture will begin to bubble and turn golden brown. This should take about 5-7 minutes.
- Add Vanilla and Cream: Once the mixture reaches a deep golden color, remove it from the heat. Carefully stir in the vanilla extract and heavy cream. Be cautious, as the mixture may bubble up.
- Pour and Cool: Pour the hot butterscotch mixture onto the prepared baking sheet. Spread it out evenly with a spatula. Allow the candy to cool completely at room temperature or in the refrigerator until it hardens.
- Break into Pieces: Once the candy is hard, break it into pieces. Store in an airtight container at room temperature or in the refrigerator.
