Keto broccoli cheese balls

Ingredients:

  • 1 medium head of broccoli (about 2 cups, chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray (for baking)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Broccoli: Steam the broccoli florets until they are tender. You can do this by microwaving them in a covered dish with a little water for about 3-4 minutes or by steaming them on the stovetop. Once done, drain any excess water and let them cool slightly.
  3. Chop the Broccoli: Finely chop the steamed broccoli or pulse it in a food processor until it’s broken down into small pieces.
  4. Mix Ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, almond flour, eggs, minced garlic, onion powder, salt, and black pepper. Mix until everything is well combined.
  5. Form the Balls: Using your hands, form the mixture into small balls (about the size of a golf ball) and place them on the prepared baking sheet.
  6. Bake: Lightly spray the broccoli cheese balls with olive oil spray. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside.
  7. Serve: Let the broccoli cheese balls cool for a few minutes before serving. Enjoy them warm as a snack or appetizer.

Tips:

  • You can add different spices or herbs to the mixture for added flavor, such as paprika, cayenne pepper, or chopped fresh parsley.
  • For a dipping sauce, try serving these with a side of ranch dressing or a low-carb marinara sauce.
