Keto broccoli cheese balls

Ingredients:
- 1 medium head of broccoli (about 2 cups, chopped)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup almond flour
- 2 large eggs
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray (for baking)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Broccoli: Steam the broccoli florets until they are tender. You can do this by microwaving them in a covered dish with a little water for about 3-4 minutes or by steaming them on the stovetop. Once done, drain any excess water and let them cool slightly.
- Chop the Broccoli: Finely chop the steamed broccoli or pulse it in a food processor until it’s broken down into small pieces.
- Mix Ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, almond flour, eggs, minced garlic, onion powder, salt, and black pepper. Mix until everything is well combined.
- Form the Balls: Using your hands, form the mixture into small balls (about the size of a golf ball) and place them on the prepared baking sheet.
- Bake: Lightly spray the broccoli cheese balls with olive oil spray. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside.
- Serve: Let the broccoli cheese balls cool for a few minutes before serving. Enjoy them warm as a snack or appetizer.
Tips:
- You can add different spices or herbs to the mixture for added flavor, such as paprika, cayenne pepper, or chopped fresh parsley.
- For a dipping sauce, try serving these with a side of ranch dressing or a low-carb marinara sauce.
