KETO BOUNTY BARS
Ingredients:
For the Coconut Filling:
- 1 ½ cups unsweetened shredded coconut
- ¼ cup coconut oil (melted)
- 2-3 tbsp powdered erythritol (or your preferred keto sweetener)
- 1 tsp vanilla extract
- Pinch of sea salt
For the Chocolate Coating:
- 100g (3.5 oz) sugar-free dark chocolate (preferably 85% cocoa or higher)
- 1 tbsp coconut oil (melted)

Instructions:
- Prepare the Coconut Filling:
- In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered erythritol, vanilla extract, and sea salt.
- Stir everything together until the mixture is well combined. You should have a slightly sticky, dough-like consistency.
- Line a baking tray or plate with parchment paper.
- Shape the coconut mixture into small bars or bites (about the size of a standard bounty bar).
- Place the shaped bars on the parchment paper and refrigerate for at least 30 minutes to firm up.
- Make the Chocolate Coating:
- In a heatproof bowl, melt the sugar-free dark chocolate and coconut oil together, either in the microwave (in 20-second intervals) or over a double boiler until smooth and fully melted.
- Coat the Coconut Bars:
- Once the coconut bars have firmed up, dip each one into the melted chocolate, coating it fully. Use a fork to lift the bars out of the chocolate and place them back on the parchment paper.
- Allow the excess chocolate to drip off before setting them back down.
- Chill and Set:
- Once all the bars are coated, refrigerate them again for at least 30 minutes until the chocolate is set.
- Serve:
- Once the chocolate has hardened, your Keto Bounty Bars are ready to enjoy! Store them in an airtight container in the fridge for up to a week.

Optional:
- You can sprinkle a little sea salt on top of the chocolate before it sets for an extra flavor contrast.
- If you want to make them even more decadent, try adding a bit of unsweetened almond butter or peanut butter to the coconut filling.
