Ingredients:

- 1/4 cup coconut flour
- 2 tbsp chia seeds
- 2 tbsp unsweetened shredded coconut
- 2 tbsp keto-friendly sweetener (like erythritol or stevia)
- 1/2 tsp vanilla extract
- 1/4 cup protein powder (unflavored or vanilla, keto-friendly)
Instructions:
- Prepare the Mix:
- In a mixing bowl, combine the Greek yogurt, almond flour, coconut flour, chia seeds, shredded coconut, sweetener, and vanilla extract.
- Mix well until all ingredients are thoroughly combined.
- Add Blueberries:
- Gently fold in the blueberries, being careful not to crush them.
- Shape the Bites:
- Using a spoon or small cookie scoop, form the mixture into bite-sized balls. You can use your hands to shape them if needed.
- Freeze:
- Place the bites on a parchment-lined baking sheet or plate and freeze for about 1-2 hours, or until they are firm.
