Ingredients:

  • 1 cup Greek yogurt (full-fat, unsweetened)
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 tbsp chia seeds
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp keto-friendly sweetener (like erythritol or stevia)
  • 1/2 tsp vanilla extract
  • 1/4 cup protein powder (unflavored or vanilla, keto-friendly)

Instructions:

  1. Prepare the Mix:
    • In a mixing bowl, combine the Greek yogurt, almond flour, coconut flour, chia seeds, shredded coconut, sweetener, and vanilla extract.
    • Mix well until all ingredients are thoroughly combined.
  2. Add Blueberries:
    • Gently fold in the blueberries, being careful not to crush them.
  3. Shape the Bites:
    • Using a spoon or small cookie scoop, form the mixture into bite-sized balls. You can use your hands to shape them if needed.
  4. Freeze:
    • Place the bites on a parchment-lined baking sheet or plate and freeze for about 1-2 hours, or until they are firm.
  5. Store:
    • Once firm, transfer the bites to an airtight container and store them in the freezer. They can be enjoyed straight from the freezer or allowed to thaw for a few minutes for a softer texture.
