KETO BISCUITS AND GRAVY
Ingredients:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, Parmesan cheese, baking powder, baking soda, and salt.
- Add the melted butter and eggs to the dry ingredients. Mix until a dough forms.
- Scoop the dough onto the prepared baking sheet, forming 8-10 biscuits.
- Bake for 15-20 minutes, or until golden brown on top.
- Allow the biscuits to cool slightly before serving.
Keto Gravy
Ingredients:
- 1 lb (450g) breakfast sausage
- 2 tbsp unsalted butter
- 2 tbsp almond flour
- 2 cups heavy cream
- 1 cup chicken or beef broth (make sure it’s low-carb)
- Salt and pepper, to taste
Instructions:
- In a large skillet over medium heat, cook the sausage until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, melt the butter. Stir in the almond flour and cook for 1-2 minutes until it starts to brown slightly.
- Gradually add the heavy cream and broth, stirring constantly to prevent lumps.
- Bring the mixture to a simmer and cook until it thickens, about 5-10 minutes.
- Return the cooked sausage to the skillet and mix well.
- Season with salt and pepper to taste.
- Serve the gravy over the keto biscuits.
