Ingredients:
- Dry Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 2 tbsp powdered erythritol (or any keto-friendly sweetener)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- Wet Ingredients:
- 2 large eggs
- ¼ cup unsweetened almond milk
- 2 tbsp melted coconut oil (or butter)
- 1 tsp vanilla extract
- For Frying:
- Coconut oil or avocado oil (for frying)
- Optional Toppings:
- Powdered erythritol mixed with a bit of cinnamon
- Sugar-free chocolate glaze
Instructions:
- Prepare the Dough:
- In a medium-sized bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs and then add the almond milk, melted coconut oil, and vanilla extract. Mix well.
- Slowly add the wet ingredients to the dry ingredients, mixing until a thick dough forms. If the dough is too sticky, you can add a bit more almond flour.
- Shape the Donuts:
- Roll the dough into a ball and flatten it slightly. Use a small round cutter or your hands to shape the donuts. If you want traditional donut shapes, use a smaller cutter to cut out the center.
- Fry the Donuts:
- In a deep frying pan, heat the coconut oil or avocado oil over medium heat until it reaches about 350°F (175°C).
- Carefully place the donuts into the hot oil. Fry them for about 2-3 minutes on each side until golden brown.
- Remove the donuts and place them on a paper towel-lined plate to drain excess oil.
- Add Toppings:
- While the donuts are still warm, you can dust them with powdered erythritol mixed with cinnamon.
