Keto Best Homemade Fried Donuts

Ingredients:

  • Dry Ingredients:
    • 1 ½ cups almond flour
    • ¼ cup coconut flour
    • 2 tbsp powdered erythritol (or any keto-friendly sweetener)
    • 1 tsp baking powder
    • 1 tsp ground cinnamon
    • Pinch of salt
  • Wet Ingredients:
    • 2 large eggs
    • ¼ cup unsweetened almond milk
    • 2 tbsp melted coconut oil (or butter)
    • 1 tsp vanilla extract
  • For Frying:
    • Coconut oil or avocado oil (for frying)
  • Optional Toppings:
    • Powdered erythritol mixed with a bit of cinnamon
    • Sugar-free chocolate glaze

Instructions:

  1. Prepare the Dough:
    • In a medium-sized bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, cinnamon, and salt.
    • In another bowl, beat the eggs and then add the almond milk, melted coconut oil, and vanilla extract. Mix well.
    • Slowly add the wet ingredients to the dry ingredients, mixing until a thick dough forms. If the dough is too sticky, you can add a bit more almond flour.
  2. Shape the Donuts:
    • Roll the dough into a ball and flatten it slightly. Use a small round cutter or your hands to shape the donuts. If you want traditional donut shapes, use a smaller cutter to cut out the center.
  3. Fry the Donuts:
    • In a deep frying pan, heat the coconut oil or avocado oil over medium heat until it reaches about 350°F (175°C).
    • Carefully place the donuts into the hot oil. Fry them for about 2-3 minutes on each side until golden brown.
    • Remove the donuts and place them on a paper towel-lined plate to drain excess oil.
  4. Add Toppings:
    • While the donuts are still warm, you can dust them with powdered erythritol mixed with cinnamon.
